Black pepper tofu works when the sauce is built around tofu instead of borrowed from a meat recipe. Tofu is mild and absorbent, so it wants a bold, salty-peppery glaze and a crisped exterior that gives the sauce something to cling to — a chicken-style sauce poured over soft tofu just slides off.
The method is home-stove friendly: extra-firm tofu, pressed and cornstarch-coated for crunch, tossed in a coarse-black-pepper soy glaze with ginger, garlic, and shallot.
Ingredients
Serves 4 over rice.
- 1 (14-oz / 400 g) block extra-firm tofu, pressed
- 2 tbsp cornstarch
- 3 tbsp neutral oil, divided
- 4 tbsp low-sodium soy sauce
- 1 tbsp sugar
- 1 tbsp coarsely ground black pepper, plus more to taste
- 1 tbsp fresh ginger, minced
- 3 cloves garlic, thinly sliced
- 1 small shallot, thinly sliced
- 1 tbsp rice vinegar (or unseasoned rice wine vinegar)
- 3 scallions, sliced, for serving
For serving: cooked rice.
Method
- Press the tofu: wrap in a clean kitchen towel, set on a rimmed plate, weigh down with something heavy (a skillet plus cans works), and rest 20 minutes. Unwrap and cut into 1-inch cubes.
- Toss the cubes gently with the cornstarch until evenly coated.
- Heat 2 tbsp of the oil in a large nonstick or well-seasoned skillet over medium-high heat. Arrange tofu in a single layer; cook 7 minutes, turning, until golden and crisp on most sides. Transfer to a plate.
- Reduce heat to medium; add the remaining 1 tbsp oil, shallot, garlic, and ginger. Cook 2 minutes, stirring, until aromatic and softened.
- Stir in the black pepper and toast 30 seconds until very fragrant.
- Add the soy sauce and sugar; simmer 1 minute until slightly thickened and glossy. It should coat a spoon — if it stays watery, simmer 1 minute more; if it goes syrupy, loosen with a spoonful of water.
- Return the tofu to the pan and toss gently to coat. Off the heat, stir in the rice vinegar and half the scallions. Serve over rice with the remaining scallions.
Tips and ingredient notes
- Why not a chicken swap: chicken brings its own fat and savory depth; tofu brings a blank canvas. This sauce runs saltier and more pepper-forward than a typical chicken stir-fry sauce on purpose.
- Pepper grind: coarsely cracked pepper gives warm, aromatic heat in bursts; finely ground gives even, sharper heat. Coarse is the pick here.
- Gluten-free: tamari instead of soy sauce; confirm the cornstarch label if strict.
- Timing: tofu will not stay crispy once sauced for more than a few minutes — serve immediately. This is not a freezer-friendly or great-leftover dish; texture degrades.
Storage and food safety
Allergen note: contains soy (soy sauce); check labels for wheat/gluten. Tofu is a perishable protein: keep refrigerated until use, do not leave it at room temperature for more than 2 hours, and refrigerate leftovers promptly. Serve immediately for the best texture.
